The grapes came from a different Barossa vineyard to the 2014, and were picked slightly earlier in ripeness. The fuller clay-loam at Light Pass has given a very distinctive varietal Cabernet Franc lift to the florals. No doubt the earlier picking is also helping the violet character be more prominent.
A true varietal Cabernet Franc and a delight to experience the pureness of this, making it so much easier to understand what to look for on both bouquet and taste.
Fermentation took place at Wine Wise Winery using set techniques established for the 2014 vintage.
Again Allier Oak was used. Fifty percent now. Medium toast. However the time in oak was reduced to seventeen months prior to bottling on 8th December 2016. The reduced time still gave the sought after “spiciness” but allowed the florals more prominence, so adding greatly to the deluxe premium style so looked for.
Final alcohol is 14.1%, though this is rounded up to 14.5% on the label. Yet another attention to detail for excellence.
Another detail is the Merlot component being reduced to just eight percent of volume. This still gives lovely plummy lift yet does not over-power the florals.
Marjico Cabernet Franc 2015 is fantastic in so many ways and really gives great understanding of the variety and super premium quality.
There are many dishes to complement this wine, and most if not all will be in beautiful balance and harmony with the wine.
